Using YouTube translatable captions & Picture in Picture of interpreter signing
Translatable captions: I (Tim F) need to create a video showing the whole process of doing this but basically all you have to do to create translatable captions for YouTube is upload a script to a video that you own and YouTube will "magically" sync up the two and then make the captions available in 51 languages).
Picture in picture: I used Camtasia Studio to easily add the video with the interpreter signing.

Non-verbal students
Example Using WordQ/SpeakQ (which could also be Co:Writer, Read/Write Gold, etc)
The idea here is that a student who is non-verbal could type a script and then use WordQ/SpeakQ, etc to speak their script for them to add their voice to their mathcast. Of course they could also ask a verbal peer (partner) to be their voice but use the script they had written and simply direct them to speak lines of their script when needed.
Blind students
Using tactile graphics + voice explanations on iPods, mPowers, etc
