Using YouTube translatable captions & Picture in Picture of interpreter signing
Translatable captions: I (Tim F) need to create a video showing the whole process of doing this but basically all you have to do to create translatable captions for YouTube is upload a script to a video that you own and YouTube will "magically" sync up the two and then make the captions available in 51 languages).
Picture in picture: I used Camtasia Studio to easily add the video with the interpreter signing.

Click on little triangle in bottom right corner and choose CC and then your desired language)
Using picture in picture of sign language interpreter
Non-verbal students
Example Using WordQ/SpeakQ (which could also be Co:Writer, Read/Write Gold, etc)
Blind students
Using tactile graphics + voice explanations on iPods, mPowers, etc
